Rosemary Plant Care

Rosemary (Salvia rosmarinus, formerly Rosmarinus officinalis) grows as a perennial in USDA Zones 7–10 and as an annual in Zones 5–6. It is one of the most commercially cultivated culinary herbs in the US, with California, Oregon, and Texas leading production. US culinary varieties include 'Tuscan Blue', 'Arp', and 'Spice Islands'. Why rosemary fails for most US gardeners

The two fastest ways to kill rosemary are overwatering and insufficient drainage. A rosemary plant sitting in wet soil for more than 48 hours begins developing root rot — and by the time the foliage yellows and wilts, the root system is already compromised. Dry, fast-draining soil is not optional.

Rosemary is a Mediterranean shrub. In its native habitat across Spain, Italy, and Greece, it grows in thin, rocky, alkaline soil that drains immediately after rain. Minimal rainfall in summer. Intense sun. No competition from water-demanding plants. US gardeners who treat rosemary like a garden annual — planting it in rich, moist vegetable garden soil — find it dead within a few weeks in humid summers.

The second most common failure is planting rosemary in a location that gets less than 6 hours of full sun per day. Rosemary in partial shade grows weakly, stretches toward available light, loses its dense aromatic character, and becomes significantly more susceptible to disease. Four hours of sun is not enough.

Understand these two requirements — dry, well-draining soil and full sun — and rosemary care becomes straightforward.

USDA zones and hardiness

Rosemary is a perennial in USDA Zones 7–10. In Zones 5–6, it dies when temperatures drop below 10°F for extended periods. In Zones 3–4, it is best treated as an annual or container plant that overwinters inside.

Variety choice matters enormously in borderline zones. ‘Arp’, developed in Arp, Texas, is the most cold-hardy rosemary variety reliably documented in Zone 5 trials. It has survived temperatures as low as -10°F in protected spots with good drainage. ‘Salem’ and ‘Madelene Hill’ (also called ‘Hill Hardy’) show similar hardiness.

In warmer zones, trailing varieties like ‘Prostratus’ grow low and wide, making excellent ground covers for slopes. Upright varieties like ‘Tuscan Blue’ and ‘Barbecue’ (a name used in the South for various upright types) are preferred for culinary use and ornamental borders.

Soil and planting requirements

Rosemary’s soil requirements are specific: fast-draining, low-fertility, slightly alkaline (pH 6.0–7.5), and never compacted or wet.

Amending garden soil for rosemary:

Native garden soil in most US regions is too dense and fertile for rosemary to thrive long-term. Before planting, amend the bed with 40–50% coarse sand, pea gravel, or perlite mixed into the top 12 inches of soil. In clay-heavy soils, raised beds or mounded planting are more reliable — clay holds water that kills rosemary roots.

For containers:

Mix standard potting soil with 30–40% perlite or coarse sand. Never use potting mix labeled “moisture control” — it retains water longer than rosemary tolerates. Terracotta pots are superior to plastic for rosemary because they allow moisture to evaporate through the pot walls, reducing root rot risk.

Planting:

  • Plant in full sun — 6–8 hours of direct sun daily
  • Space 2–3 feet apart for upright varieties; 3–4 feet for spreading types
  • Plant slightly above the surrounding soil level in heavy soils to improve drainage
  • Mulch lightly with gravel or crushed stone rather than wood chips — wood mulch retains moisture near the crown

Light requirements

Rosemary needs a minimum of 6 hours of direct sun per day. This is not a suggestion — it is the threshold below which rosemary declines noticeably in growth rate, aromatic intensity, and disease resistance.

In a US home garden, this means a south or west-facing bed with no shade from trees, structures, or taller plants in the afternoon. Morning sun only (east-facing) typically delivers fewer than 6 hours by midsummer and is not adequate for long-term vigor.

Signs of insufficient light:

  • Sparse foliage with wide gaps between needle clusters
  • Pale green rather than deep green or blue-green coloring
  • Increased susceptibility to powdery mildew

Signs of correct light:

Rosemary planted in partial shade rarely dies immediately but declines over 2–3 seasons. Plants that received full sun originally may tolerate increasing shade from a growing tree for a few years before the decline becomes obvious.

Watering rosemary

Water rosemary only when the top 2 inches of soil are completely dry. Stick your finger in — if any moisture remains, wait. In established garden plants after the first season, rainfall in most US regions is usually sufficient without supplemental watering.

New transplants need consistent moisture for their first 4–6 weeks while roots establish. After that, begin stretching the interval between waterings. An established rosemary plant in the ground in Zone 7 or warmer often needs no irrigation from late spring through fall in normal rainfall years.

Overwatered rosemary shows yellowing or browning lower stems and needles, followed by soft, dark crown tissue. Underwatered rosemary wilts and drops needles from the inside of the plant outward, while tips remain green.

Pruning rosemary for better production

Prune rosemary in spring, just after new growth begins but before temperatures climb above 80°F consistently. Remove up to one-third of the plant’s green growth. Never cut back into the brown, woody stems below the green foliage line — they do not produce new growth.

This is the single most important pruning rule for rosemary. The brown, woody base of a mature rosemary plant is essentially bark. It does not regenerate when cut. Prune into it and you will have a dead stub. Only the green, leafy stems regenerate reliably.

Annual spring pruning routine:

  1. In early spring (late March to April in Zones 6–7), assess the plant’s overall shape
  2. Use sharp bypass pruners — clean blades prevent disease spread
  3. Cut each stem back by one-third, leaving two-thirds of green foliage remaining
  4. Remove any dead, damaged, or crossing branches entirely
  5. Shape lightly for the form you want — rounded or columnar depending on variety

In Zone 6b, I prune my container rosemary in late March after bringing it back outside. By June, the plant has filled back in completely with new, fresh growth.

Lightly pinching stem tips throughout the growing season — removing just the top 2–3 inches — encourages branching and produces a denser, more productive plant. This also counts toward your harvest.

Harvesting rosemary correctly

Harvest rosemary by snipping the soft green stem tips with clean scissors or pruners. Take only the top 20% of any stem’s length. Removing more than 20% of the plant’s total growth in one harvest weakens the plant significantly.

Rosemary is ready to harvest from mid-spring through late fall in most US zones. The most flavorful stems are harvested just before or during flowering — essential oils are most concentrated at this stage.

Fresh vs. dried rosemary:

  • Fresh stems: use within 1–2 weeks; store in the refrigerator wrapped in a slightly damp paper towel
  • Dried rosemary: tie small bundles and hang upside down in a warm, dry, ventilated spot for 1–2 weeks; dried rosemary holds flavor for 6–12 months

Best harvesting times: Morning, after dew has dried but before the day’s heat peaks. Essential oil concentration is highest in morning conditions.

Rosemary harvested frequently (light pinching every 2–3 weeks) produces more total harvest than rosemary harvested heavily once or twice per season. The regular pruning stimulates new growth that carries the next flush of aromatic leaves.

Overwintering rosemary in cold climates

For Zone 5–6 gardeners, overwintering rosemary is the biggest annual challenge. Two reliable methods:

Method 1: Container overwintering (recommended) Grow rosemary in large containers (14–16-inch pots) on a patio or deck all summer. Before the first hard frost (when temperatures drop below 28°F for extended periods), move the container to a cool but frost-free location.

Ideal overwintering conditions:

  • Temperature: 35–50°F (an unheated garage, basement, or cool sunroom)
  • Light: minimum 4–6 hours of bright light; a south-facing garage window is ideal
  • Water: once every 3–4 weeks — the plant is semi-dormant and uses very little water
  • Avoid: heated indoor rooms above 65°F, which prevent dormancy and lead to leggy, weakened growth

Return the container to full outdoor sun in April after the last frost date.

Method 2: Heavy mulching in-ground (Zone 6 only) Cut the rosemary back by one-third in late October. Mound 6–8 inches of coarse sand or gravel mulch around the base (not wood chips — too much moisture retention). Cover with a frost blanket pinned down at the edges during the coldest stretches. Remove mulch and blanket gradually in spring.

This method works in mild Zone 6 winters but fails in severe cold below -5°F. Container overwintering is more reliable.

Common rosemary problems

Powdery mildew: White, powdery coating on stems and leaves. Caused by poor airflow in humid conditions. Improve spacing and air circulation. Remove severely affected stems. Preventative: plant in full sun with good airflow, avoid overhead watering.

Root rot: Brown, soft stems at the crown; yellowing foliage. Almost always caused by wet soil. No reliable cure once established — prevention through drainage is essential. If caught early, remove the plant, cut away affected roots, and replant in better-draining soil.

Spittlebug: White frothy masses on stems in early summer. Cosmetically unpleasant but rarely harmful. Wash off with a garden hose spray. No chemical treatment needed.

Rosemary beetle: Metallic green-purple beetles that eat foliage. Native to Europe but now present in California and spreading. Hand-pick and drop in soapy water. Not yet established across most of the US.

Woody, bare base with foliage only at the tips: Normal aging in older plants. Prevent with regular annual pruning. Once a rosemary is severely woody, rejuvenation from the base is not possible — replace it with a new plant.

Rosemary as a companion plant and in the garden

Rosemary works exceptionally well alongside other Mediterranean herbs and drought-tolerant perennials. It thrives with the same companions as lavender — creeping thyme, catmint, salvia, and Russian sage all share rosemary’s preference for full sun and dry, well-draining soil.

Rosemary also has a strong historical role as a companion plant in vegetable gardens. Its strong scent is documented to deter cabbage moths, bean beetles, and carrot fly when planted at garden edges. The effect works at close range — rosemary needs to be within 2–3 feet of the target vegetable to provide useful deterrent protection.
