That determination to ripen all at once is the most important thing to understand about romas. A beefsteak or cherry tomato keeps producing over 8–12 weeks. The flesh itself sets romas apart. A standard slicing tomato is 90–94% water. Best roma tomato varieties for US gardens

Standard Roma VF is the variety most gardeners picture when they say “roma.” It’s a 1930s Italian heirloom hybrid that produces 3-inch, egg-shaped fruits at 73–78 days. VF indicates Verticillium and Fusarium resistance—critical in humid states like Ohio, Tennessee, and Georgia where these soil diseases wipe out susceptible varieties.

San Marzano is the Italian sauce tomato used in Neapolitan pizza and is now widely available through US seed companies. It’s longer and thinner than standard roma, with thicker walls and about 20% fewer seeds. It takes 78–85 days, making it marginal in Zone 5 without transplanting early. Its flavor is slightly more acidic and complex than Standard Roma VF.

Amish Paste is a US heirloom developed in Pennsylvania Dutch communities. It’s larger than standard roma (6–8 oz), making it slower to mature at 80–85 days, but the yield per square foot can exceed both because the flesh-to-seed ratio is exceptional. Good choice for Zones 6–8.

Viva Italia is a hybrid with added disease resistance (VFFNA—Verticillium, two Fusarium races, nematodes, and Alternaria stem canker). For Mid-Atlantic and Southern gardeners where disease pressure is highest, Viva Italia produces reliably where standard roma gets wiped out.

In Zones 9–10, a second planting in August can produce a fall crop before the heat of summer kills the plants. Romas handle heat better than many slicing varieties but stop setting fruit above 95°F.

Soil prep and spacing

Romas prefer the same soil conditions as other tomatoes: well-drained, fertile ground with a pH of 6.0–6.8. The difference is that paste tomatoes are slightly more sensitive to calcium imbalance, which causes blossom end rot.

Pre-planting soil work:

  • Work in 3–4 inches of compost to improve drainage in clay soils and water retention in sandy soils
  • Add 1–2 tablespoons of lime per transplant hole if your soil pH is below 6.0
  • Crushed eggshells or gypite added at planting provides a calcium reservoir that reduces blossom end rot later

Watering roma tomatoes

Consistent moisture is the single biggest management factor for roma tomatoes. Irregular watering is the primary cause of blossom end rot, cracking, and split fruit—all of which hit romas harder than cherry or beefsteak types because of their thicker flesh.

Target 1–1.5 inches of water per week during vegetative growth and 1.5–2 inches during fruit development. The exact amount matters less than consistency. Letting soil dry out between waterings, then soaking it, stresses the plant and disrupts calcium uptake.

Fertilizing

Romas need moderate fertility. Too much nitrogen causes excessive foliage at the expense of fruit, a common mistake when gardeners use high-nitrogen lawn fertilizer on their vegetable beds.

At transplant: A balanced starter fertilizer (5-10-5 or similar) or a shovelful of compost worked into the planting hole is enough.

At first flower: Switch to a low-nitrogen tomato fertilizer or potassium-phosphorus fertilizer. Something like 5-10-10 encourages fruit set. Do not add nitrogen now.

At fruit development: A weekly diluted liquid fish emulsion or compost tea keeps plants producing. Stop feeding once the bulk of fruit is set—late fertilizing extends vegetative growth but doesn’t add to yield.

Blossom end rot: the roma problem

Blossom end rot shows up more often in romas than in any other tomato type. It appears as a dark, sunken, leathery patch on the bottom of the fruit and ruins the fruit for canning.

Blossom end rot is a calcium deficiency symptom, but calcium in the soil is rarely the problem. The real issue is inconsistent water uptake preventing calcium from moving from the soil to the fruit. You can add calcium directly to the soil and still get blossom end rot if watering is erratic.

To prevent it:

  • Mulch 3–4 inches deep around plants to hold soil moisture
  • Water on a consistent schedule, not when you remember
  • Avoid deep cultivation that damages feeder roots near the surface
  • If problems persist, apply calcium foliar spray as a short-term fix

If you do get blossom end rot, cut affected fruits off rather than leaving them on the vine—they won’t recover and they slow the plant’s energy toward healthy fruits.

Harvesting roma tomatoes

Romas ripen from the bottom of the plant upward. Start checking fruits when the skin turns from orange to red. The tell is firmness—a ripe roma gives slightly when pressed but is not soft.

Harvest markers:

  • Deep red from blossom end to stem (no green shoulders)
  • Slight give when pressed with your thumb
  • Releases from the vine with a gentle twist

Do not wait for romas to get fully soft on the vine. Slightly underripe romas picked at 90% color will ripen fully indoors in 3–5 days at room temperature. On the vine, fully ripe romas in humid weather start to crack and mold within 48 hours.

Harvest all at once or in stages? Since romas are determinate, most of the crop ripens in 10–14 days. You can pick daily as individual fruits ripen, or let 80% of the crop turn red and do a full harvest in one or two sessions—the latter is more efficient for canning days.

Store unwashed romas at room temperature for up to a week. Do not refrigerate—cold temperatures destroy the flesh texture and flavor.

Cooking and preserving

Roma tomatoes shine in cooked applications where their low moisture content matters:

Tomato sauce: Simmer cut romas for 20–30 minutes. They reach sauce consistency in half the time of slicing tomatoes and don’t require straining seeds unless you want ultra-smooth texture.

Canned whole tomatoes: A 32-quart batch (about 8 canning jars) takes 25–30 pounds of romas—roughly the entire single-plant harvest from 3–4 plants.

Oven-dried tomatoes: Halve romas, place cut-side up on a sheet pan, drizzle with olive oil, and roast at 250°F for 4–6 hours. They concentrate down to a sun-dried tomato texture and freeze well for 12 months.

Frozen raw: Romas freeze better raw than slicing tomatoes because of their lower water content. Core them, freeze whole on a sheet pan, then transfer to bags. Frozen romas are ready for cooking straight from the freezer.
